Sev Bhaji is a Madhya Pradeshi delicacy and consists of sev made of chickpea flour and ajwain paratha. Also known as Shev ki Sabzi, it has a variant in Maharashtrian cuisine. Sev Bhaji consists of a particular sev, known as, bhavnagari sev or tikhat (spicy) sev. Our chef hails from Ujjain and uses her family recipe, which makes it authentic, tasty, and it’s easy to add to any diet.
How to Eat
We serve this delicacy with some ajwain paratha. Break a bite-sized piece from the paratha, take some sev dipped in gravy, and enjoy. The sev bhaji is a mildly spicy delicacy which has some crunchy sev, thick gravy, and combines perfectly with the paratha to give it a unique taste. It’s supposed to be enjoyed hot and can be eaten at lunch or dinner with your family.
