Mawa, also known as Khoya or Mawo, can be used in both sweet and savoury dishes. It originates from Gujarat, but is today found across the country. It is a staple menu in Irani cafes and bakeries in Mumbai and Pune from late 19th and early 20th centuries. Mawa Cake can be made of either whole milk or thick milk heated in an open pan. Our chef uses a generous amount of cardamom to enhance the flavour of Mawa Cake. Cardamom helps in curing stomach problems and helps in controlling high blood pressure.

The taste of mawa will be present in every bite with some garnished almonds. The mawa is not only included to enhance the taste, it also makes the cake light and spongy. To best enjoy the cake, serve it as an evening snack with a hot beverage or you could eat it by itself at breakfast.
