A classic Indian dessert from the northern states of India and a staple delicacy in everyone’s plate in Punjab, Phirni is a thick and creamy rice kheer made with whole milk. Rice is soaked and broken before adding it to a simmering mixture of creamy, whole milk, a little sugar, essence, saffron and cardamom. It is then brought to a boil and cooked until the rice is well done and the mixture becomes thicker. A generous garnish of pistachios and almonds complete this super rich dessert.
