Most of the families in India have bonded over bowls of kheer. It has been a part of Indian traditional cuisine since ancient times. It still remains to be a favorite of over a billion Indians. Kheer is eaten on occasions like festivals, weddings, birthdays etc. In fact, kheer is also a part of the offerings made to God (bhog). The chef brings back the ancient style of making kheer. She grinds soaked rice, fries them a bit and adds caramel to it. Then she adds milk, cardamom, nutmeg, dry fruits and saffron, then she cooks it. The result? Thick and delicious kheer that’s a treat to have.
