Daal Baati, also known as Dal Baati Churma, hails from the Rajasthani cuisine and has a rich history to it. According to folklore, Dal Baati’s origin traces back to the founder of kingdom of Mewar. As the Rajput’s were setting up their rule in the region, baati was their ideal meal during war. Some say that, the soldiers would leave the baatis in the sand to bake while they were at war. After returning, they would consume it covered with ghee and with some curd. Dal Baati is a popular delicacy in the Western states of India like, Uttar Pradesh, Maharashtra, Gujarat, and others. Our chef uses her traditional family recipe which makes this dish healthy as well as tasty.

The best way to enjoy the dish is to break the baati, add some gatte ki sabzi, dal, and chutney to it. Mix it with your hands or a spoon and enjoy. The dish is supposed to be enjoyed hot as the baati is thick and covered with ghee. The dish, overall, is mildly spicy and it can be consumed at lunch or dinner.
