Sabudana Khichdi consists of tapioca pearls (regional name- Sabudana or Sago). This is a Maharashtrian delicacy and people usually make it when they are fasting. Sabudana Khichdi is a popular dish throughout India and gains demand during fasts on days of Shivratri or Navratri. In major cities like Mumbai, Pune, Jaipur, Nagpur, and others, it’s a famous street food delicacy. It’s also known as Sabudana Usal in Maharashtra’s Vidarbha region and is a healthy delicacy as it is gluten-free and promotes muscle growth.

People traditionally serve this dish during festivities and when a person is fasting, mainly during Navratri fasts. Sabudana, also known as Tapioca or Sago in English, comes from a starch extract of roots of the Cassava plant.
