Khur Curry is a soupy mutton dish prepared in Saoji style. It’s a rare delicacy in India but is famous in Pakistan and Bangladesh. Also known as Pacha, it originates from the Central Asian cuisine but Muslim cooks in Lahore, Hyderabad, and Lucknow changed the dish. The dish is also called Paya and has a popular variation called Siri Paya, where Siri means head and Paya means feet. But don’t worry, we include the normal pieces of the mutton. In Delhi, it’s sometimes called Khurode from the Khur, which means hoof.
