Food start-up Nativ Chefs brought laurels to the city by securing the second position in the national competition for Best Bussiness Plan organized by Nice Aarohana. India’s first and only Business Plan Competition was organized for cultural enterprises where in Nativ Chefs from Nagpur had participated in the food and beverages among the five focus categories.

Chocolate‘, the word has such power that it can make a person’s day. Hearing it instantly brings energy and happiness that no other sweet brings. Whether it be any festival like Diwali or a special occasion like Valentine’s day, chocolates are the epitome of gifting happiness to your friends and family. Although, we all crave chocolates 24×7, let’s also know how chocolate came into being and some of its benefits!!

https://www.nativchefs.comDo you know that chocolate is one of the oldest sweets in the world? The history of chocolates dates back to the Mayans, Aztecs, and Olmecs of Southern Mexico. According to some research, there are traces in the Olmec culture that are from around 1500 B.C. They passed their recipes to the Mayans, who not only consumed it but also revered it. The Aztecs believe the Gods presented them with Cacao. They used cacao beans as a form of currency to purchase their groceries and valued it ‘more than gold’!! Interestingly, chocolate is extracted from the fruit of cacao and the fruit or pods consists of 40 beans. Cocoa beans are made after drying and roasting to bring out their flavour, however, some question about their nutritional values!!

We all love chocolate and consuming it isn’t as harmful as you think. There are some benefits to consuming chocolate, some are-

  • It also helps in cognitive function, which means, it helps in keeping the brain healthy by improving the blood flow in required parts.

We have common chocolate bars, which are available readily in all types of stores. Chocolate cakes are some of the most common forms for any festive or celebratory occasions. People use chocolate powder and mix it in hot or cold milk to make a sweet beverage. There are also chocolate balls, fudge, and coating (used on cakes as a glaze) as well among other forms. Among its various forms, there is no single type of chocolate.

Chocolate as a term is ambiguous and can be divided into different types according to its taste and use. The first and the most common is Milk Chocolate, which is sweet and contains milk with cocoa powder. Then there is White Chocolate, which doesn’t contain any cocoa. It consists of milk solids which gives it that white colour. A bitter taste of Dark Chocolate is not everyone’s forte as it consists of a high proportion of cocoa and less milk. Lastly, there is Unsweetened Chocolate, which is pure chocolate liquor and is called baking chocolate. The chocolate industry is vast and there are several competitors vying for the top spot.

But what are some of the top chocolatiers?? European countries like Switzerland and Belgium are the chocolate capitals in the world. Also, leading brands like Cadbury, Ferrero, Guliyan, Hershey’s, Lindt, just to name a few are some of the best brands and have the finest quality of chocolates.

All in all, we all know that chocolate is a sweet that is loved by all age groups and we all consider it as one of our best friends!!

Makar Sankranti and Til Gud Laddus – A Sweet Start for New Year

तिळ गुळ घ्या गोड गोड बोला!! is a common expression said while offering Tilgul laddus to guests during the festival of Makar Sankranti. Interestingly, this festival falls on the same day almost every year!!

 Well, Makar Sankranti celebrates the farmer’s harvest and occurs in the month of Magha to mark the Winter Solstice. People dedicate their prayers to the Sun God, Surya, and thank him for their successes and prosperity.

www.nativchefs.comSankranti is celebrated differently in each state and the festival is known by different names like Makara Jyothi in Kerala, Til Sankrant in Bihar, Odisha’s Makara Chaula, or Maghi in Haryana, Himachal Pradesh, and Punjab.

The rituals to celebrate this festival vary from state to state as some people take a dip in rivers like Ganga, or the Yamuna. Some organise melas or fairs, the most famous being Kumbh Mela, held every four years at one of the four holy locations.

In Uttar Pradesh, it’s called Kicheri, which involves ritual bathing. Several people gather at their respective sacred places for holy bathing and have to bathe early in the morning while fasting. Kite flying is an age-old ritual that involves kite fighting with friends and people from the neighborhood.

www.nativchefs.comIt is a four-day festival in Tamil Nadu, where the first day is called Bhogi. Commemorations are started by discarding and destroying old clothes and other things by lighting them on fire. The second day is called Thai Pongal and is the central day of the festival. They celebrate by cooking rice with milk and jaggery in brand new pots, garnished with brown sugar and dry fruits. Maattu Pongal is the third day, where people offer thanks to their cattle. The fourth and final day is Kaanum Pongal, where people visit their friends and family to convey thanks for their help in the harvest.

Maghi is a religious festival in Punjab. Lohri is marked a day before this festival where they celebrate the new harvest and praise the Sun God, Surya. People light lamps with sesame oil as it brings prosperity and drives away all sins. People dance their Bhangra and sit together to eat delicious food such as kheer and khichadi with some jaggery.

www.nativchefs.comMaharashtra celebrates Makar Sankranti with the gifting of sweets like Gajar ka Halwa, Tilgul Laddu, and Puran Poli. According to folklore, Lord Surya reconciled with his son, Shani, and because of this, Lord Surya visited Shani’s house on Sankranti. That is why people gift sweets to others to forget negative feelings. Traditionally, women wear black clothes as it adds warmth to the body in the winter season. Married women invite friends and family members for Haldi-Kunku, where guests provided Tilgul laddus and a small gift.

The exchanging of Tilgul is understood as a token of goodwill to guests and is greeted with the phrase Tilgul Ghya, aani god-god bola meaning accept this tilgul laddu and speak kind words. The thought behind this is to forget all the bad feelings and resolve them to talk sweetly and remain friends.

Til (Sesame Seeds) and Gud (Jaggery) are winter food as they keep your body warm and increases your immunity as well. While Hindu mythology regards them as a symbol of Immortality, it helps support a healthy digestive system, maintains bone health, and helps generate body heat. Gud contains Iron and Vitamin C and is a traditional remedy for throat problems and some respiratory disorders.

Even though the Sankranti celebrations differ from state to state, til and gud are the hero ingredients to any sweet prepared during this festivity.

The hands which made those Modaks you Loved!!!!

After receiving Lord Ganesha’s blessings, let your tastebuds taste our ukadiche modak and fried modak. We are sure you will give in to your cravings and keep wanting more.

When you open the box of Modaks, the burst of aroma accentuates the whole experience. Well, this blog is about those hands which prepared these sweet delights.

Chef Anuradha was born and brought up in a Maharashtrian household where every festival is celebrated with great enthusiasm. Being brought up in a joint family where guests are frequently visiting and food always cooking, and the cultural palette that her mom and her aunts brought with them gave her a chance to relish the different flavors of Maharashtra. But Modaks always had a special place in her heart. She reminisces the time when she used to watch her mother and grandmother making modaks, which provoked her interest in modaks. She even says that she knows how to make them from a very early age and also says that it took her a lot of practice to get those ‘kaliyas’ right.

So, one fine day our Chef Community team went to her place for a small interview. They wanted to know about her experience in executing the orders, which then lead to a whole thread of conversations knotted with a lot of sweet memories and experiences, which made her who she is today.

Starting with her childhood, she was born and raised in a joint family that resides in a small town in Maharashtra. “You could see as to how amazing her childhood was by just looking at her smile when she talks about it,” says one of the members from the Chef’s Community department, and as already mentioned Modaks were the most cherished chapter of her childhood. Completed her 12th in Science, she did her graduation in Bachelors of Arts and Masters of Arts from her hometown. She was working as a teacher when she got married and left her hometown, and started her new life in the city of oranges, Nagpur.

www.nativchefs.comChef Anuradha says that her family has always been very supportive. Especially her husband, who always motivated her to socialize, learn new things, and explore new opportunities. She came to know about Nativ Chefs from a reference of her friend. It was a golden opportunity for her because cooking was something that is not less than a passion for her. What fascinated her the most about the model was it believes in serving only traditional and hygienic food, and that’s what she wanted to showcase- Her homemade authentic Ukadiche Modaks!!

Her journey with Nativ Chefs till now has been an amazing one! And when asked about executing modaks from last year, she says, “I got this long list of preorders for modaks lined up, and the first day of Ganesh Chaturthi was pretty stressful”; but with the help of her husband and son, she was able to serve us those beautiful modaks. She summarizes the whole experience as an amazing one as this was something she always wanted to do.

Determination is the key! She recalls that she used to wake up at 4 am to prepare modaks, and she had made more than 6000 modaks!! Well, that’s the power of a home chef, which no one should underestimate. This year, even in the pandemic, she has received a lot of pre-bookings for modaks, and she is very excited to serve you the delightful authentic Ukadiche modak, which we deliver to you with utmost safety.

Chef Anuradha has been a part of various cooking shows, sometimes as a participant and even as a judge. Nativ Chefs has onboarded her other traditional delicacies as well like Upwas specials Sabudana Khichdi, Shengdana Laddu, and other festive delights like Fried Modaks, Til Gud Laddu, and many more.

Why are 21 modaks offered to Lord Ganesha?

It’s that time of the year!!! Vighnaharta is here. The chanting of the hymns, prayers, fasts, decorations, and all types of celebrations. What a wonderful sight to behold; And Ganesha’s favorite Modaks! That is why he is even known by the name ‘Modakpriya’ because of his never-ending love for modaks.

www.nativchefs.comPeople celebrate Ganesh Chaturthi with great enthusiasm in the states of Maharashtra, Goa, Karnataka, Madhya Pradesh, and many others. Modaks are specially served as Bhog during Ganesh Chaturthi because they are Lord Ganesha’s favorite. Ritual dictates that 21 modaks are to be served to Lord Ganesha. A lot of people are unenlightened about the story behind the 21 modaks offered to Lord Ganesha.

So it all started when one day Lord Shiva along with Goddess Parvati and Lord Ganesh visited Anusuya, the wife of an ancient Rishi Atri. Anusuya presented Ganesha with a tray full of toothsome delicacies, which Ganesha went on devouring, but no dish could satisfy his hunger. He ate everything present on the plate, but nothing was able to satiate his hunger. Some believe that Anusuya said that she would only serve food to Lord Shiva only after satisfying Ganesha’s appetite. During this, she thought of feeding Ganesha something sweet which might fulfill his hunger, and it worked! Ganesha finally gave a loud burp, which indicated that his belly was satisfied. Interestingly enough, Lord Shiva also burped loudly soon after Ganesha’s burp, and that too 21 times, which meant Lord Shiva’s stomach was also full. It made Goddess Parvati curious as to what was the sweet treat that Anusuya offered Lord Ganesha.

Parvati asked Anusuya about the sweet she had offered Ganesha. To which Anusuya replied that it was Modak that satisfied Ganesha’s hunger. From that instance, Parvati expressed it as her wish that devotees of Ganesha will always offer 21 modaks to him.

Well, Modaks are akin to happiness. It is also known and adored by different names like Mokadam or Kudumu in Telugu, modaka, or Kadubu in Kannada, Kozhukattai, or Modagam in Tamil, and Modak in Marathi and Konkani.

Modaks have also evolved a lot over the years. You get to relish on a plethora of modaks. But in my opinion, nothing can beat the traditional and authentic taste of Ukadiche and Talani Modaks. Curious about how they are made and what stuffing goes in?

Ukadiche Modaks consists of a delicious filling made of coconut, dry fruits, and jaggery, which is inside a thin covering made of rice flour. After steaming the modaks, garnish them with a dollop of ghee to enhance the taste. As the modaks contain jaggery, it is packed with antioxidants and nutrients which help cleanse the liver, respiratory tract, intestine, and stomach by flushing out toxins from the body.

 

www.nativchefs.comTalani Modaks are often made in two different ways. One is made with coconut and sugar filling, while the other consists of Puran. These modaks are a must-have during Ganesh Chaturthi.
